How to enjoy elephant fish

This is an asian method. Boil a pot of water and two chicken bones to make chicken stock. Remove the bones when water has been boiling for half an hour. Add to pot a tea spoon of tamarind powder. Stir and add some cut up celery, small pieces of pineapple, tomato quarters and anything else you like.
When the mixture is at a boil on low heat add the chunks of elephant fish and wait until the meat turns white and firm. Remove meat onto a dish. Scoop yourself a bowl of soup and add cooked rice or pre-boiled rice noodles to your bowl. Then enjoy the noodle soup with your fish.
This recipe can be used with any fish that is firm and sweet when cooked. Bon appetit.
