AT HOME... RECIPE

South Seas Fish in Foil

Ingredients:

  • 4 small whole fish (1/2 lb each)
  • 4 tablespoons melted butter
  • 2 teaspoons soy sauce
  • juice of 1 lemon
  • 1/2 teasepoon ground ginger
  • Fresh leaves of spinach, well washed

Method:

Clean and wash fresh Fish. Stir the melted butter, soy sauce and lemon juice together and brush fish inside and out with the mixture. Sprinkle inside fish generously and then dust lightly on top.

Plunge spinach leaves into boiling, salted water, simmer for 1 minute, drain. Lay a serving of seasoned fish on spinach and wrap in the leaf, then wrap in foil turning the ends in and folding securely.

Place on a baking tray and cook in a moderate oven of 350(f) degrees for 30-40mins. Bring to the table in foil. If you prefer, wrap individual pieces in spinach in one large piece of foil, and remove from foil onto a hot serving plate.

Serves 4. Basic Jasmine rice will compliment this.
