AT HOME... RECIPE
Rockling with oven-roasted tomatoes, corn, spaghetti & rocket

Ingredients
- 1/2 to 1 medium brown onion
- 4-5 oven roasted tomatoes, semi-dried tomatoes or simply diced roma tomatoes
- 1-2 shredded corn on the cob, already blanched
- 1/3 packet spaghetti, cooked to your liking
- generous handful of rocquet lettuce
- 1 medium rockling fillet, large diced
- 1 lime, juice of
- 2 dsp sour cream or extra olive oil
- salt & pepper
- parsley, finely chopped
- 1 tsp gremolata
Method
Simply saute onion in the pan along with the gremolata, add the tomato and allow to reduce. Then add the corn and season. Add lime juice along with the rockling & gently cook for a few seconds. Add the warmed spaghetti, toss for a second, then follow with the rocquet and parsley. Finish with the sour cream or olive oil for desired taste.
