AT HOME... RECIPE

Aussie Salmon Poached in Tony's Sauce

Ingredients:

  • I like to fillet my salmon
  • 2 medium onions sliced
  • 2 cans of crushed tomatoes
  • Couple of cloves of garlic
  • Parsley
  • 1/2 teaspoon of curry
  • 2 to 3 tablespoons of worcestershire sauce
  • A splash of tabasco sauce
  • Salt and pepper to taste

Method:

  • First chop the onions and fry in pan (large enough to hold the fillets.
  • Once onions begin to soften, add the garlic, parsley and the two cans of tomatoes.
  • Mix together then add the curry, worcestershire and tabasco sauce and mix.
  • Let the sauce simmer for 10 to 15 mins.
  • Taste and add salt and pepper if required. Sometimes a little sugar is required to sweeten.
  • Add the fillets to the sauce, cover the fillets with the sauce and cover the pan.
  • Simmer for 5 to 10 mins and serve on a bed of rice.

My children like their rice and fish covered by the sauce.
