Aussie Salmon Poached in Tony's Sauce

Ingredients:
- I like to fillet my salmon
- 2 medium onions sliced
- 2 cans of crushed tomatoes
- Couple of cloves of garlic
- Parsley
- 1/2 teaspoon of curry
- 2 to 3 tablespoons of worcestershire sauce
- A splash of tabasco sauce
- Salt and pepper to taste
Method:
- First chop the onions and fry in pan (large enough to hold the fillets.
- Once onions begin to soften, add the garlic, parsley and the two cans of tomatoes.
- Mix together then add the curry, worcestershire and tabasco sauce and mix.
- Let the sauce simmer for 10 to 15 mins.
- Taste and add salt and pepper if required. Sometimes a little sugar is required to sweeten.
- Add the fillets to the sauce, cover the fillets with the sauce and cover the pan.
- Simmer for 5 to 10 mins and serve on a bed of rice.
My children like their rice and fish covered by the sauce.
